About Sydney Oyster Princess

From the River. Built for Reliable Supply.

Generations of oyster-growing knowledge combined with modern farming systems on the NSW Mid North Coast.

Our Story

Generations on the river. A modern operation built on them.

Our oyster-growing operations are connected to generations of experience working with the rivers and coastal waters of New South Wales. Traditional knowledge of local waterways is combined with modern farming techniques and production systems to support consistent oyster quality and reliable commercial supply.

Sydney Oyster Princess continues to expand its farming capacity while maintaining a strong focus on freshness, responsible farming and product quality.

"Preserving the hands-on farming knowledge and attention to quality behind every harvest."

Our Farming Waters

The Macleay River Estuary.

Our primary farming waters sit around Rainbow Reach and South West Rocks on the NSW Mid North Coast — a natural environment well suited to growing Sydney Rock Oysters.

  • Diverse growing zones — variations in water depth, currents and salinity provide different growing conditions throughout the production cycle.
  • Natural nutrition — plankton-rich estuary waters support healthy oyster growth, good condition and distinctive flavour.
  • An established oyster-growing region — South West Rocks and the surrounding Macleay River system form part of one of NSW's established oyster-growing regions.
